Made with a mix of Mangalitsa pork mince and ground British Wagyu cross beef. Cubed Wagyu is added to the mix along with black pepper, garlic and whole yellow mustard seeds plus a generous dash of local Sussex dry white wine. Hung to gently dry for several months until ready and then thinly sliced
